Bar Sotano, a new Rick Bayless restaurant in River North, opens this new spot in the basement of Frontera Grill (which you enter through the alley in the back). There’s a long list of mezcal and and tequila, and the food menu ranges from ceviche to paella and a burger with jalapeno crema and tomato jam. Just like the markets, Mexico’s master distillers offer a nearly unfathomable variety of flavors.
